    Austin’s Vegan Weird Science Halloween Cupcakes

    Kool-Aid definitely doesn’t contain any real fruit, but that’s not to say that the mostly synthetic beverage mix isn’t vegan. All flavors and varieties of Kool-Aid drinks and drink mixes are free of animal derivatives, which means Kool-Aid is vegan. Kool-Aid can be used as a flavoring or coloring. Kids find Kool-Aid fun and Halloween brings out the kid in all of us. 

    Ingredients

    Dry Ingredients:

    • 1¼ Cups All-Purpose Flour
    • 3/4 Cup White Organic Sugar
    • 1 teaspoon Baking Soda
    • ½ teaspoon Salt
    • 2 packs Orange flavored Kool-Aid
    • 1/4 cup vegan chocolate chips

    Wet Ingredients:

    • 3/4 Cup very cold water 
    • ⅓ Cup Canola Oil
    • 2 Tablespoons White Vinegar

    Heads:

    • 12 to 14 strawberries (with green caps left on)

    • 1/4 cup vegan chocolate chips (more if making googly eyes homemade) 

    • 1/2 of frosting (without green Kool-Aid, just white icing for teeth, eyes and to glue eyes onto berries) 

    • 12 to 14 vegan googly eyes (commercial or homemade) 

    • 12 to 14 tooth picks

    Frosting:

    • 1/2 Cup Non-Hydrogenated Shortening (I used Earth Balance Shortening)
    • 1½ Cups Organic Powdered Sugar
    • ½ teaspoons Vanilla Extract
    • 2 Tablespoons cold water 
    • 2 packs of Lemon-Lime flavored Kool-Aid

    Instructions:

    Heads 

    1. Before making cupcakes. Create the strawberry heads. Wash and dry the berries. 
    2. Cut a hole for the “mouth” with melted chocolate fill in the mouth. 
    3. Make a small amount of the icing without the green Cool-Aid. And with a piping bag make small teeth. 
    4. Attach the googly eyes with icing. Set in refrigerator to allow icing to harden. (If you are making the googly eyes 

    Making the Cupcakes 

    1. Preheat your oven for 350 F (180C). Line a cupcake pan with 12 paper liners, try and use one with a Halloween theme. 
    2. In a big bowl, whisk the dry ingredients together.
    3. In another bowl, mix the wet ingredients together.
    4. Then pour the wet ingredients into the dry and whisk that up. Whisk until the batter just comes together, don’t over mix it or your cupcakes will be sad cakes.
    5. Evenly divide batter among the liners. Add a few vegan chocolate chips to the center of the batter of each cupcake. 
    6. Bake 18-20 minutes until the tops are slightly golden.
    7. To make the frosting, mix all the ingredients together with a hand mixer. Wait until the cupcakes are cooled completely before frosting.
    8. Use a piping bag, a butter knife or just a plastic bag with a small hole cut in the corner to frost your cakes.
    9. Add toothpicks to the bottom of strawberries monster heads and place in the center of each cupcake.
