• Austin's Vegan Peach Clafouti

    Peaches are in season so make this while you can!

    Clafouti, a classical French dessert has a texture between baked pudding and a pancake. Great cold or hot. Serve leftover cold for breakfast the next day with spiced tea. 


    • 1 cup flour, plus more for dusting
    • 5 large fresh peaches 
    • 3/4 cup almond milk 
    • 3/4 cup vegetable oil
    • 1 Tablespoon egg replacer 
    • 1/4 cup sugar 
    • 1 teaspoon pure vanilla extract 
    • Pinch of salt 
    • 1 teaspoon cinnamon 
    • 1 tablespoon coconut oil 


    1. Preheat oven to 400F. 
    2. With coconut oil grease a 10" ovenproof skillet. Dust with flour. 
    3. Wash clean and slice peaches in wedges. About 1/2" thick. Toss wedges with cinnamon. Arrange in skillet in a circular shape starting at the outside edge of skillet. 
    4. Add dry ingredients in a bowl. Add liquid ingredient. Mix till smooth. 
    5. Pour over peaches. 
    6. Bake 30 to 40 minutes or until batter is firm. 
    7. Let stand and cool about 15 minutes. 
    8. Cut into wedges. Dust with powder sugar.
