Mukti means liberation. This fresh all vegan sandwich is a wonderful way to express the liberation for the typical animal product sandwich. This sandwich is piled high crunchy cucumber, carrot, and pickled radish and pairs them with vegan nut cheese, avocado, and watercress, for a sandwich that will please any yogi.
1/4 red onion
2 multigrain rolls cut in half
Cashew cheese (homemade or commercial)
Thinly sliced cucumber
Watercress (option: alfalfa sprouts)
Sprinkle onion slices with a dash of red-wine vinegar; let set for 10 minutes. Lightly toast rolls.
Spread 1 slice with cashew cheese and layer with cucumber, watercress, onions, avocado, and grated carrot and radish.
Top with top side of roll.
Serving suggestions: The Mukti Sandwich goes well with root chips, vegan potato salad or vegan coleslaw.
